I absolutely love fall… the cool crisp air, the changing leaves, and of course pumpkin everything!  Crunchy, chewy, chocolaty and packed with pumpkin flavor, these spiced kale chips are the perfect snack for the season.

Pumpkin Kale Chips

Ingredients

  • 1 bunch organic raw kale

 Kale Chips Pumpkin Sauce

  • 1 1/4 cup organic cashews, soaked
  • 1 cup organic pumpkin puree
  • 3 Tbsp organic maple syrup
  • 1/2 cup purified water
  • 1/2 tsp cinnamon
  • 1/4 tsp allspice
  • 1 pinch nutmeg
  • 1 pinch salt

 Chocolate Drizzle 

  • 1/4 cup organic maple syrup
  • 2 Tbsp organic tahini
  • 3 Tbsp organic cacao powder

Wash the kale thoroughly and allow it to dry completely. Once all the moisture removed de-stem the kale and set aside in a large bowl.

Combine the Kale Chip Pumpkin Sauce ingredients in a high-speed blender and blend until creamy.

It’s about to get messy! Pour the sauce over the raw kale and massage with your hands until the kale is completely coated.

Spread the kale in a single layer on a non-stick dehydrator sheet. This recipe should fill two 14”X14” racks. Once your kale is perfectly placed, set your trays aside.

Combine the chocolate drizzle ingredients in a high-speed blender and blend until creamy.

Pour the chocolate drizzle into a ziplock bag or pastry bag, cut a small hole, and carefully drizzle the chocolate sauce over the kale.

Once you have successfully drizzled all of the chocolate, place the dehydrator sheets into the dehydrator at 115°F for about 6-8 hours.

I like to leave the chips for 8 hours to ensure they are completely dry and a little bit crispy. Allow the chips cool to room temperature before packing them in an airtight container.

Pumpkin Kale Chips

My journey to veganism started when I was in flight school.  I was plagued with constant sinus problems and was almost medically disqualified from flight training.  After two surgeries, nothing seemed to work until one doctor finally suggested eliminating dairy from my diet.  I had nothing to lose, so I removed all dairy products and didn’t expect much to happen.  I felt better almost immediately, and I haven’t had a sinus problem since.

I realized for the first time the huge impact our diets have on our health. I began eliminating all animal products, noticing an increase in health and well-being with each harmful animal product I eliminated. While researching the health impacts of my diet, I became aware of the ethical and environmental benefits of a vegan diet and became more and more passionate.

Along my journey, I noticed a lot of negative stereotypes towards vegans, especially vegan men.  I created www.aveganman.com to prove that the stereotypes are wrong and that it takes a real man to live compassionately.  I want to help empower all vegans and change the world by informing people of the many benefits of a vegan, cruelty-free lifestyle.
