Cucumbers are known to contain 95% water, which gives you a very alkaline and nutritious base. They also prevent headaches, promote digestion, reduce cholesterol and regulate blood pressure.

Sesame seeds also, both black and white, have huge health benefits. From preventing diabetes, fighting cancer to promoting healthy skin and digestion. Asian Sesame-Cucumber Salad

  • 4 tsp light soy sauce
  • 3 tsp sugar
  • 2 tsp Yuzu-it Pepper Sauce
  • Tad of Nanami Togarashi (or any other chili peppers)
  • 1 Tbsp toasted sesame oil
  • 1/4 tsp black and white sesame seeds each
  • 3-4 Japanese or Persian cucumbers

Using a sharp knife or a mandoline, if you have one, slice cucumbers finely into 1/4 inches slices. Put cucumbers in a bowl, sprinkle with salt and mix well. Leave cucumbers for about 10 minutes to absorb the salt, then rinse well and drain excess liquid.

Combine soy sauce, chili peppers, Yuzu-It and sugar in a medium bowl. Use a whisk to incorporate sesame oil and set a side.

Add the cucumbers to the dressing and stir together. Sprinkle sesame seeds into the salad and serve immediately along side Miso-Marinated Shiitake Wraps. 🙂

The dressing can be prepared 24 hours in advance. Keep it refrigerated.

Enjoy! Asian Sesame Cucumber Salad
