This team player of dishes is a refreshing compliment to any dining table. Serve it as a cooling appetizer, crisp salad, late night snack, or a side dish to your meal. Easy-to-follow recipe is a great way to improve your health while pleasing the palate.
Cucumbers are known to contain 95% water, which gives you a very alkaline and nutritious base. They also prevent headaches, promote digestion, reduce cholesterol and regulate blood pressure.
- 4 tsp light soy sauce
- 3 tsp sugar
- 2 tsp Yuzu-it Pepper Sauce
- Tad of Nanami Togarashi (or any other chili peppers)
- 1 Tbsp toasted sesame oil
- 1/4 tsp black and white sesame seeds each
- 3-4 Japanese or Persian cucumbers
Using a sharp knife or a mandoline, if you have one, slice cucumbers finely into 1/4 inches slices. Put cucumbers in a bowl, sprinkle with salt and mix well. Leave cucumbers for about 10 minutes to absorb the salt, then rinse well and drain excess liquid.
Combine soy sauce, chili peppers, Yuzu-It and sugar in a medium bowl. Use a whisk to incorporate sesame oil and set a side.
Add the cucumbers to the dressing and stir together. Sprinkle sesame seeds into the salad and serve immediately along side Miso-Marinated Shiitake Wraps. 🙂
The dressing can be prepared 24 hours in advance. Keep it refrigerated.
