I simply love potatoes; loved them since childhood.  I looked forward going to to my grandma’s, so I can eat homemade french fries and watch my favorite cartoons all day.  Not much has changed with years, except that now I eat sweet potatoes instead.

With twice the fiber, twice the calcium and over 1,300 time more Vitamin A than white potato, these poppies are also anti-inflammatory and help fight stomach ulcers and cure different types of cancer.

  • 3 medium sweet potatoes, peeled
  • 3-4 garlic cloves, peeled and sliced
  • 2 Tbsp olive oil
  • 2 tsp New Mexico chili powder or other chili powder of your choice
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp garlic powder

Spicy Sweet Potatoes

Preheat oven to 375° F.

Cut peeled potatoes into 1/2″ inch cubes and combine them in a bowl with olive oil, salt, pepper, garlic powder and chili powder of your choice.

Once coated, mix in garlic slices and transfer to a cast-iron skillet or two mini individual server dishes.

Bake for about 20-30 minutes or until potatoes are tender, stirring every 10 minutes.
